This one day course is aimed at existing food business to gain knowledge of their legal obligations for food labeling, allergen information & management of allergens.

The programme will cover the following topics:

• The purpose of packaging & labels
• Update to labelling & food information legislation
• Mandatory information on food labels
• Nutrition & health claims
• Provenance & Other Claims
• Avoiding “Mis-leading” labels or artwork
• Use of bar codes
• Use of food marketing terms – e.g. “Artisan”, “Farmhouse”, “Traditional” etc.
• Food product specific regulations – e.g. Jam, Honey etc.
• Shelf life & other microbiological testing & sampling
• What are allergens & food intolerances
• Provision of allergen information to consumers
• Identification & management of allergens in a food business
• Incorporating allergens into your risk assessment & HACCP plan
• Benefits of Allergen Accreditation.

Extensive use will be made of video clips and real case studies throughout the workshops, where appropriate, to underpin the aims and objectives of each module. These will be drawn from our extensive experience and network of contacts in the Irish food industry, in conjunction with guidance from the local enterprise office. Course materials will be supplemented by best practice and latest business thinking in industry.

Participants are very welcome to bring along examples of existing or planned food labels, artwork, packaging that they are using or plan to use.
