New Wicklow Food and Beverage Products now on sale in Supervalu  thanks to the Food Academy Programme

Food AcademyEight food and beverage producers from Co Wicklow, all Food Academy graduates, will have their products listed in Supervalu Stores in Baltinglass, Blessington, Greystones, Wicklow, Charlesland, Arklow and Bray from next Monday 21st May. Each of the eight businesses have participated in a number of workshops and mentoring sessions since September of last year as part of the Food Academy progamme. The Food Academy, which is a collaboration between the Local Enterprise Office network, Bord Bia and Supervalu works with and nurtures small businesses on their journey from start up to getting their products on Supervalu shelves.

1)      Coolattin Cheddar by Tom Burgess

Tom Burgess has been producing top quality milk from his pasture fed cows in West Wicklow for twenty years. Tom wanted to develop a product which reflected the outstanding quality of this milk. This desire led to the creation of Coolattin Cheddar - an award winning raw milk cheese made exclusively from summer milk.

The art of cheesemaking pivots around the producer’s ability to work in partnership with nature. This journey starts with the soil. Wicklow has some of the most fertile land in the world which, sustainably managed, produces lush clover rich pasture, the ideal diet for cheesemaking milk. 

Once cows are milked, the milk is pumped directly into the cheese vat, where it begins its magical transformation. The traditional ‘pasture to cheddar the same day’ cheesemaking process allows Tom to capture the maximum amount of nutrients and unique taste profiles, that simply cannot be achieved when the milk has been cooled and stored prior to processing.

The alchemy of cheesemaking relies on working with microorganisms and enzymes to convert the milk into cheese.  Tom maintains that “These microorganisms and enzymes are the real rock stars of cheesemaking, we merely try to guide the process to produce the optimal results. The interaction between proteins and enzymes continues as the cheese is slowly matured in carefully controlled conditions. This creates an award-winning gourmet experience of flavour, texture and aroma which develops slowly from sweet fruit, to a full nutty note.”

  1. Craft Beer from Wicklow Brewery by Leigh and Ashley Williams

Wicklow Brewery was set up in 2014 when Leigh & Ashley Williams owners of the popular Mickey Finn’s Pub in Redcross who were looking to stock a range of craft beers, which were growing in popularity, but found it difficult to find suitable suppliers. After much research, they decided to build their own Brewery in a building adjacent to Mickey Finn’s Pub and so Wicklow Brewery was born. 

Four years on, Wicklow Brewery are producing a range of genuine craft beer, which is brewed and canned in the Brewery in Redcross and which has won major International Awards. The Wicklow brewery range of beer is now on tap in over 50 venues in Co Wicklow including most hotels and off licence outlets. They are also bottling product and are rolling the product nationwide and extending distribution to the retail sector via Supervalu’s Food Academy.

They use their own well water and zero chemicals to create their range which is brewed in small batches to enhance taste and character.

Matt Byrne left Ireland with his girlfriend, Finn, in 2010 to eat their way around Asia and settle in Sydney, Australia. Both foodies, they agree the best thing about their trip was all the different flavours, tastes and textures at each meal. Melody Street Foods began in a tiny kitchen by the beach on Melody Street in Sydney, Australia, where Matt spent his spare time cooking up a storm; the result of which was unique spicy, natural, and versatile slow-cooked tomato-based sauce. With the help of the learnings and mentoring provided through the SuperValu Food Academy, in 2017 Matt learned how to bottle his love for food and flavour and bring it to the supermarket shelf. He now creates handmade, slow-cooked batches of Melody Sauce and the flavoured mayonnaise, Melody Mayo, in a kitchen on Penny Lane in Kilcoole, Co. Wicklow. Where possible Melody Street Foods sources ingredients from local Irish suppliers, including local fruit and vegetable shops.

  1. Sukhi’s India - Indian spice mixes By Sukhvindar Kaar

After many years cooking her favourite Indian dishes for family and friends, Sukhvindar Kaur was encouraged to make her homemade Pakora and Masala spice mixes available to help others create tasty and authentic Indian dishes at home in their own kitchens.  And so Sukhi’s India was born in June 2017 with the intention of sharing with the public, Indian recipes popular in India and firm favourites of Sukhi’s family. It is Sukhi’s assertion that cooking Indian food shouldn't be completed, her recipes have been passed down through generations of her family who come from the Punjab region of India and they stem from a time when the focus was on  making good honest wholesome food using simple techniques and ingredients.  As Sukhi says “My Indian food is simple, quick and tastes great, I hope that by using my mixes you too can enjoy creating delicious Indian food as much as I have”.

  1. Le Paysan Artisan Pâté by Thierry Peurois

Thierry Peurois grew up close to Saint-Malo in Northern France where his parents ran a traditional “Boucherie-charcuterie” business selling raw and prepared meat products.  In October 1996, shortly after arriving in Ireland, the Frenchman set up Le Paysan deli and restaurant putting Greystones on the map as a foodie destination for the first time. Thierry ran the successful deli /restaurant for over a decade before branching out into a range of prepared products.  Thierry’s food philosophy is simple but rooted in a strong family tradition to deliver quality freshly made produce using the best of local ingredients. Today, Thierry is using the best of Irish ingredients to produce a range of Artisan Irish, free range / local pâtés. Operating from a customised production facility in Wicklow town, Thierry is producing a scrumptious Irish Free Range chicken liver pâté and a delectable Vegetarian pâté which are now stocked in Supervalus throughout Wicklow and south Dublin.   

“Our new pâtés have been extremely well received by the consumers. It is also a pleasure to reconnect with so many who have enjoyed Le Paysan products over the years” says Peurois.

  1. Rohan’s Sauces by Rohan O’ Duill

Rohan’s Sauces are made by Rohan O’Duill, an Irish chef with a simple philosophy “live a balanced life, no mumbo jumbo diets, look after your body and eat good food.” These pasta sauces are packed full of healthy and hearty vegetables with a minimum amount of salt and no added sugar or any other artificial ingredients often found in other sauces. Produced in small batches in Bray, Co Wicklow, the sauces are an ideal way of ensuring that children (and adults!) get their daily vegetable intake with each jar of Rohans sauces containing 4.5 portions of vegetables.
