Giselle Makinde Goncalves with a Bachelor in Tourism with and a post graduate degree in hotel management, moved to Ireland with her family in June 2018 and held roles at Dublin’s As One restaurant and Cloud Picker’s Café as Head Chef.

Giselle passion for tackling food waste inspired her to develop a range of products from surplus produce using fruits which proved to be the perfect match for her “zero waste, more taste” ethos. After completing specialist courses at the Carpigiani University helped to hone her gelato-making skills, developing her recipes from scratch and her vision for Cream of the Crop to transform it from “just” a gelato maker into a food tech business that turns unwanted foods into a range of healthy treats. The first product to launch as part of this initiative is Bananitas, dark chocolate-coated banana pieces dehydrated before being enrobed in 70% cacao. Based in Fingal, this pioneering food tech company battles food waste by upcycling and using surplus ingredients to produce natural snacks, gelato and chocolate confectionery from “wonky” food that would otherwise go to waste into delicious treats that fights food waste with every bite.

LEO Dublin City - Laura McCarthy

Dublin City - Laura McCarthy

Laura McCarthy is the Managing Director of Drink Botanicals Ireland.

In 2017, at the age of 20, Laura McCarthy, experienced a pivotal lightbulb moment when she identified a gap in the Irish market. The booming trend of Gin & Tonic served with elaborate garnishes and botanicals in bars inspired Laura to create a product that would allow consumers to recreate that premium experience at home.

Her first product was the Gin Fusion Kit, which sold out after a week of launching at her local off-licence Redmond’s of Ranelagh. The business expanded the product line introducing cocktail making kits and other related products. In 2023, Drink Botanicals Ireland continues revolutionising the beverage and culinary experience by supplying premium dried garnishes and natural syrups to consumers and the food service industry.

The company’s mission is to provide convenience, sustainability, and exceptional quality, enhancing the flavours and presentation of beverages and culinary creations.

The company offer a solution to a common challenge that mixologists, bartenders, chefs, and culinary enthusiasts face. Their ready-to-use dried garnishes eliminate the need for time-consuming and labour-intensive processes such as cutting and drying fruit. With their range of premium dried garnishes, professionals and enthusiasts alike can elevate their creations, whether it's crafting exquisite cocktails or preparing stunning culinary dishes.

Sustainability is at the core of the company’s business. Fresh fruit has a limited shelf life, resulting in significant waste. Approximately half of all fruits and vegetables produced worldwide go to waste, contributing to greenhouse gas emissions. Using dried garnishes, bars, restaurants, and food service establishments can minimise fruit waste and reduce its environmental impact, whilst still maintaining its full nutritional value.

In addition to their dried garnishes, they specialise in premium natural syrups. Their syrups are pulp-based and cold-produced and contain natural ingredients – setting them apart from other brands on the market. The company prioritise using natural ingredients, ensuring exceptional taste and quality. The Company found through extensive research that there is a growing consumer consciousness regarding the presence of added sugars, colourings, and preservatives in drinks. Following results of this research the company was determined to launch a more natural syrup option that would be free from excessive artificial flavourings and colourings. After conducting numerous taste tests with trusted manufacturers, the company produced a range of syrup flavours in July 2021. Each syrup is pulp-based, cold-produced, and meticulously crafted with natural ingredients. In addition to these syrups, they company expanded the product line to include a variety of dried garnishes catering to both B2B and B2C markets.
