Lorraine Murphy (pictured) is owner of Lorraine Murphy Coaching & Training specialising in producing skilled leaders working with teams to help them maximise their human performance outcomes.

She is a talented and accomplished Executive Coach, Soft Skills Trainer, Special Projects Consultant and Speaker who heightens awareness of existing skills & resources and facilitates clients to identify the strategies needed to succeed.

With over 20 years’ experience in coaching and training Lorraine has worked on both a national and international level across public, private & SME sectors. As well as her work with Business Managers and their staff, Lorraine has led several initiatives in the field of developing the competencies of Women in Business / Female Entrepreneurship and was awarded the Global Essence Entrepreneur Award 2015.

Lorraine is an accredited member of the Association for Coaching, Irish Institute of Training and Development and is formally qualified as a Trainer in Mindfulness Therapy, and holds an MA Adult & Community Education, a HDip Adult & Community Education, a BA Hons Applied Languages and a Diploma in Executive & Life Coaching.

Originally founded as a nationwide online meal delivery company, it has since developed into a thriving health food brand specializing in supplying healthy, nutritionally dense ready meals. Some of the stores we supply with our meals include, Dunnes Stores, SuperValu, Centra and Spar stores nationwide.

3 years ago my partner, Luke was diagnosed with a heart condition called Wolf Parkinson’s White which is related to Sudden Adult Death syndrome. He was always extremely fit and healthy so to say it was a shock was an understatement. The doctors had told Luke the best way to recover from his heart surgery was to eat a nutritionally balanced diet. Of course living on his own he found it difficult to cook healthy.

We decided to look into sourcing a healthy meal delivery company that produced healthy meals that were actually good for you. But we couldn’t find a thing. This is where our market research came in. We spent 5 months researching this area and in September 2016 we launched our online store. Since then we have produced almost 80,000 meals, won 8 prestigious awards both local and regionally, including Entrepreneur of the year in association with U Magazine, appeared in RTE’s Dragons Den in April 2017 (which tripled our sales and caused our website to crash) and became nutrition partners for the Monaghan & Louth senior GAA teams.

It wasn’t until March 2018 that we got a call from our local SuperValu store in Fairways, Dundalk to ask us to stock our meals and it was from there that Simply Fit Food really took off. We realised that if we wanted to scale, our online business was not the way to do it.

I am pleased to say since then we have now secured an outsourcing partner whom we have a fantastic relationship with, who produce our products for us. We have recently launched our meals into Dunnes Stores, as of the end of the month into 180 Spar stores in Northern Ireland and major forecourts around the country.

We also have big plans to export a new snack line from early 2020 (depending on the outcome of Brexit).

Profile: Sarah Daly (pictured) is Executive Director of Creative Spark, Centre for Creativity and Innovation, Co. Sarah has an Honours Master’s Degree in Social Practice for the Creative Environment from LIT, a BA in Fine Art, and also holds a Diploma in Management Coaching and Mentoring from the Institute of Leadership & Management (ILM). Experienced in business development for SMEs, mentoring and facilitation, Sarah has a keen interest in community development and engagement.

Creative Spark was formally launched in November 2012 as a dedicated creative enterprise centre & training hub for the creative industries in the North East. The first of its kind in the region, the centre supports creativity, innovation, enterprise & job creation. Today it is a regionally recognised centre for the provision of creative facilities & the delivery of creative & innovative enterprise opportunities, cultivating local community creativity, innovation & enterprise capacity.

Elaine is a founder Director Cubicle 7 Entertainment in Ireland. Cubicle 7 Entertainment makes clever games for awesome people. 

Established in 2019 to build on the growth of the company in the UK, Elaine and the Cubicle 7 team now employ ten staff in their Meath office.   The company has won numerous high profile licenses to produce role playing games in the worlds of the Lord of the Rings and Warhammer to name a few and now export games from Ireland to over 15 countries."

Elaine Connolly holds a BSc(hons) Environmental Science and MA Sustainable Environmental Management and recently completed the M1 Skillnet Illuminate Program for female entrepreneurs.

Margaret E. Ward (pictured) is an entrepreneur and an award-winning financial journalist and broadcaster. She worked at Newstalk radio, the Irish Times, The Sunday Times and Gannett Newspapers (USA).

Margaret's humorous newspaper column in the Irish Times warned of the impending financial crisis in 2008. Her Newstalk radio programme was known for "telling it like it is" and guiding listeners through the details of the 2010 bailout and its consequences.
