Top Tips for Food Businesses


The annual Savour Kilkenny Food Festival is starting on Thursday 27th October with a special event for food businesses focused on Food Product Development and looking at Top Tips for Food Businesses. The session is organised by Local Enterprise Office Kilkenny to give people the opportunity to learn from industry leaders and gain insightful information into the sector.

Guest speakers on the day include:

  • Eddie O Neill O’Neill Food Solutions (previously of Teagasc)
  • Colm Foley, BIA Innovator Campus 
  • Panel Discussion with Food Entrepreneurs - including:
  • Sarah Gough - Mileeven
  • Pat Fitzgerald - Fitzgerald Nurseries

The morning session will be hosted at the Parade Tower at Kilkenny Castle and will also include a Q&A and group mentoring sessions with the guest speakers. A comprehensive overview of the supports available will be presented by Senior Enterprise Development Officer (acting), Catherine Hennessy.

The MC for the session will be Award Winning Celebrity Irish Chef Brian McDermott.


About Brian McDermott

Brian Mc Dermott is an award-winning celebrity Irish chef from Donegal. His latest book, Donegal Table, won Best Cookery Book in the World at the Gourmand World Book Awards in China.

Brian has built a national and international reputation as a chef on one simple belief – that tasty, healthy food based around traditional recipes and local produce is something everyone should enjoy. Fans of Brian McDermott will already be familiar with his passion for local food and his home county of Donegal which has made him a regular on television and radio and on the Irish food festival circuit.

Currently appearing on RTÉ’s Today Show for his ninth year, for the past ten years Brian has been the resident chef on BBC Radio Foyle. He also is also a regular food commentator in the media in Ireland, the UK and internationally, and also speaks about business motivation and entrepreneurship, as well as current affairs.

About Eddie O'Neill

Eddie O’Neill of O’Neill Food Solutions has vast experience and is well known within the food industry network here in Ireland. Having worked for several years within Teagasc as a Food and Packaging Technologist where he was the lead in developing a range of award-winning fresh and fermented products including Cheese, Yogurt, Beverages, Sauces, Ready Meals, and Frozen Desserts.

His work has taken him to the USA, Canada, Iceland, France, Germany, the UK and throughout Ireland. In addition to that he was the NPD lead on the Food works accelerator program for HPSU food companies. He is a member of the Safe food expert group, advising on Food Safety issues and is involved with setting up and delivering training courses on food safety. Eddie is also a member of the Food Technology team at BIA Innovator Campus Galway.

About Colm Foley

Colm Foley is one of two resident food technologists at BIA Innovator Campus, Galway. He provides support with recipe formulation, new product development and food safety & quality while working on numerous technical projects for clients of the Campus. Colm’s experience is expansive across several food categories having gained experience working in the food industry in Ireland and in France. Colm is a member of the Food Industry Development Department within Teagasc and is a vital link to the services, resources, and knowledge base of Teagasc.
