A foundation for future training such as HACCP. food safety management and food supervision. The course will enable particpants to complete the Environmental Health Association of Ireland (EHAI) Primary Course in Food Safety Certificate.

EHI Primary Course in Food Safety

This qualification is suitable for any person working with foos or working in a food business who needs to have an understanding of operational food safety and play an active part in applying hygiene practices in their workplace.

  • Benefits of good hygiene - introduction to costs of poor practices, food poisoning sources.
  • Food contamination - how contaminants effect food, enter the food chain and prevention/control systems.
  • Food delivery and service - handling and storing food. Dry goods, refrigeration, freezers and separation of high risk foods.
  • Food preparation, cooking and service - Temperature control, thawing, reheating and food hygiene practices.
  • Personal Hygiene - personal responsibilities, protective clothing and control of infectious diseases.
  • Design, layout of premises and pest control - Common pests and pest control practices.
  • Cleaning - definitions and functions of cleaning and disinfection.
  • Introduction to HACCP - Hazard analysis critical control points within a food business.


  • If insufficient bookings are received on any course , the course will be cancelled and a full refund will issue.
